This recipe is quick and easy. If you can't take the heat watch out !

Ingredients
- 7 Red Habanero Peppers
- 4 Scotch Bonnet peppers
- 5 Garlic cloves
- 10 peppercorns (optional)
- ½ cup vinegar
- 1 Tbsp. Epis
- Water ( as needed)
- 1 ½ tsp. Very Noicee AP Seasoning
- Pinch of salt
- Juice of 1 lemon
Directions
- Using a pair gloves rinse the pepper under cold water. Then pull the stem off and discard. cut the peppers open and remove the seeds and discard depending on your spice tolerance. ( I did half the peppers with seeds and half without)
- Add the peppers, garlic, peppercorn, epis, and vinegar to small pot. Bring to a boil and lower the heat to low.
- Cover and allow to simmer for 15-20 minutes. careful because it can dry out if the heat is too high.
- Carefully remove the lid, making sure your face is not right on top of the pot because you don’t want to get a reaction because of the steam.
- Add the mixture to a food processor or blender. along with Very Noicee AP, salt, lemon juice ( careful not add the seeds ) and about ¼ cup water.
- Blend until the mixture is as smooth as possible. Don’t worry about it being thick. Unless too thick and you can’t blend it, then you can add about 1 tbsp. of vinegar and water.
- Pass the mixture through a strainer to extract the hot sauce. Taste for quality. If it’s too spicy for you add some vinegar little by little until you get to your desired taste.
