This Bacon Jam can be use as topping for all your favorite sandwiches or Toasts!

Ingredients
4-5 Thick cut smoked bacon cut into small dices
½ Large onion small diced
1 ½ Tsp red pepper flakes
2 Tbsp. Dark brown sugar
2Tbsp. Maple syrup
1 ½ Tbsp. Distilled white vinegar
Directions
Add the diced bacon to a skillet then place on the stove with the heat off.
Turn on the on medium. This is going to help render the bacon fat nicely. takes about 6-9 min.
Once the bacon start to brown and crisp up add the diced onions and sauté then add the red pepper flakes and ½ of the dark brown sugar.
lower heat to med-low and Stir frequently for about 15-20 minutes until the onions start to caramelize. Be patient raising the temp to high can burn it !
Continue by add the maple syrup, vinegar and left over brown sugar. Mix frequently for another 8-15 minutes.
The Mixture should have a jam like consistency, not too but not loose. Serve on top of of your favorite sandwiches or toasts!
