Ingredients
- 2 cups Basmati rice
- 2 Tbsp. Olive oil
- 1 Tbsp. Epis or green seasoning
- 2 green onions
- 2 2/3 cups of water

1 scotch bonnet pepper or habanero pepper ( optional)
- Sea salt to taste
- 2 Tbsp. unsalted butter
Directions
- Rinse the Basmati rice under cold water until the water runs clear.
Heat olive oil in a large pot over Medium-High heat, Add the rinsed rice and stir.
then add Epis and green onions. stir for 1-2 minutes.
Pour in water, add pepper, and salt. Bring to a boil, then reduce heat to low, cover with aluminum foil, and simmer for 18-20 minutes.
Remove from heat and let sit covered for 5 minutes before fluffing with a fork. Add the butter and fold it into the rice until fully melted.
