Spicy Braised Salmon

Ingredients

    • 2 salmon steaks

    • Very Noicee Seasoning, to taste

    • 2 Tbsp olive oil

    • ½ large yellow onion, small diced

    • ½ red bell pepper, small diced

    • ½ green bell pepper, small diced

    • 1 carrot, thinly sliced into circles

    • 1 Tbsp epis

    • 1 Tbsp tomato paste

    • Water (enough to cover halfway up the salmon steaks)

    • 2 Roma tomatoes, small diced

    • 2 sprigs thyme

    • 1 Scotch bonnet pepper (optional)

    • Freshly chopped green onions, for garnish

    Directions

    1. Season the Salmon: Lightly season both sides of the salmon steaks with Very Noicee Seasoning. Set aside.

    2. Sear the Salmon: Heat 1 Tbsp olive oil in a large skillet over medium-high heat. Sear the salmon on each side for 2-3 minutes until golden. Remove and set aside.

    3. Sauté the Vegetables: Add the remaining 1 Tbsp olive oil to the skillet. Sauté the onions, bell peppers, and carrots until softened, about 3-4 minutes.

    4. Add Flavor Base: Stir in the epis and tomato paste, cooking for another 1-2 minutes until well combined and aromatic.
