This recipe is quick and easy. If you can't take the heat watch out !
Ingredients
-
7 Red Habanero Peppers
-
4 Scotch Bonnet peppers
-
5 Garlic cloves
-
10 peppercorns (optional)
-
½ cup vinegar
-
1 Tbsp. Epis
-
Water ( as needed)
-
1 ½ tsp. Very Noicee AP Seasoning
-
Pinch of salt
-
Juice of 1 lemon
Directions
Using a pair gloves rinse the pepper under cold water. Then pull the stem off and discard. cut the peppers open and remove the seeds and discard depending on your spice tolerance. ( I did half the peppers with seeds and half without)
Add the peppers, garlic, peppercorn, epis, and vinegar to small pot. Bring to a boil and lower the heat to low.
Cover and allow to simmer for 15-20 minutes. careful because it can dry out if the heat is too high.
Carefully remove the lid, making sure your face is not right on top of the pot because you don’t want to get a reaction because of the steam.
Add the mixture to a food processor or blender. along with Very Noicee AP, salt, lemon juice ( careful not add the seeds ) and about ¼ cup water.
Blend until the mixture is as smooth as possible. Don’t worry about it being thick. Unless too thick and you can’t blend it, then you can add about 1 tbsp. of vinegar and water.
Pass the mixture through a strainer to extract the hot sauce. Taste for quality. If it’s too spicy for you add some vinegar little by little until you get to your desired taste.
