Peri Peri Chicken

Ingredients

      • 2 red bell pepper cut into large pieces

      • 2-3 chili peppers cut in half

      • ½ red onion cut into large pieces

      • 4-6 bird’s eye chili peppers

      • 6-8 cloves of garlic

      • small bunch of parsley

      • ¼ cup olive oil

      • ¼ cup vinegar

      • Juice of lime or lemon

      • 2 Tbps. Very Noicee All purpose seasoning or to taste

      • 1 ½ tsp cayenne pepper

      • 2 tsp smoked paprika

      • Pinch of salt

      • 2 Tbsp.. Unsalted butter

      • 3-4 Tbsp. of the peri peri marinade

      • ⅓ cup water

      • about 80-85 briquettes to heat the grill at 325-350 Degrees F

      Directions

        1. Pre heat oven to 400 degrees

        2. Add the red bell peppers, red chili peppers and the red onion to a oven safe pan. Drizzle with about 1 tbsp. olive oil.

        3. Mix, then place in the heated oven for about 20-25 minutes or until they’re roasted.

        4. Meanwhile add the rest of the ingredients listed for the marinade in a food processor and blend. Once the peppers and onions are done roasting add them to food processor and blend. the consistency shouldn’t be too chunky.

        1. Add the peri peri marinade to the chicken, use as needed.

        2. Add the spices and seasoning listed above. Mix the marinade into the chicken until the chicken is fully coated.

        3. Marinate for a minimum of 1-2 hours but preferably 8 hours or overnight.

          1. Light up the charcoal. once they’re lit and hot pour into the bottom of the grilling

          2. if you use the amount I suggested above you should have the grill temp around 325-350 Degrees F.

          3. Have the grill vents fully open

          4. Lay the chicken on the grill flipping and brushing with some of the marinade every 8-10 minutes.

          5. It should take around 30 minutes to the chicken leg quarters to be fully cooked. But use a thermometer making sure the chicken has reach 175 degrees internal.

          2. Add the chicken onto a oven safe pan. Place in the oven and roast for 45-50 minutes. Flipping half way and brushing with marinade every 10 minutes.

          3. turn oven to Broil ( 500 degrees F ) for a deeper color on the chicken during the last 6-8 minutes of roasting.
